For our St. Patrick's Day breakfast, we had an apple puffy pancake with green sprinkles and a green chocolate banana smoothie. Here are two versions of the recipe (the riper the bananas, the sweeter the end result):

2-3 overripe bananas, peeled, cut up and frozen
1-2 cups milk
1-2 T. cocoa powder
green food coloring (or spinach if you have a VitaMix)

Now the dairy-free version (taught to me by Veronica):

1-2 cups water
1 handful whole almonds
1-2 T. cocoa powder
green food coloring (or spinach if you have a VitaMix)

The almonds definitely blend up better in a VitaMix, but make a respectable smoothie in my Bosch blender as well. Here are some testaments to its yumminess!

mmmmm. sounds good! :) A lot healthier than our st. patties. We have green rice pudding. . . home made and loaded with sugar! hahaha. Actually, we have left over rice and about 8 cups of sour milk. didn't want to dump it, so what do you do?! haha. Still tasty, but. . .

Hey about those almonds. . . I have actually been making almond milk and just used a little hand held mesh strainer/sifter to strain the pulp out. Works great! It'll keep the chunks out but you'll get the flavor and cream. Then add the pulp to bread or pancakes or something. I would say about 3/4c - 1c almonds to about 64 oz. water, blend for about a minute, then strain. SO creamy. Or if you want to drink it plain, add a tsp. of vanilla and maybe a couple tsp. maple syrup or honey. Not very sweet, but SUPER tasty!

speaking of which, we just went to new hampshire to visit a maple barn there. um, so fun and amazing. Did you know it takes at least 55 gallons of sap to make 1 gallon of maple syrup. I have NO problem paying the price for the good stuff anymore. Sheesh. It actually takes MORE sap if the sugar content is low when weather does not cooperate! Anyway, we now have another gallon to add to our family name! haha ;)

it's bugging me to read through my comment so I have to correct myself,

we "had" green pudding and we "had" leftover rice... sorry about the typos.

Oh and when I say, "not super sweet," I don't mean it isn't sweet. B/c it is. It just isn't too over the top sweet. Just a yummy milk--perfect.

And it's recommended to soak the nuts for about 5 hours and strain before making a milk out of them. Can't remember why, and I'm not going to look it up again, but thought I'd pass that on to you.
